Ce mois de janvier a été le mois d’hibernation… froid, neige, gastro, rhume, fatigue… Envie de rester au chaud, devant un bon feu de cheminée, ou sous la couette… Mais janvier, c’est aussi le mois de la brioche des rois !
J’ai repris la recette de l’année dernière, et même si la brioche maison est moins aérienne que celle du boulanger français, elle est tout aussi bonne ! J’ai préparé le levain et le sirop à l’avance, pendant la sieste de Lynne. Les étapes nécessitent des temps de repos ingérables, avec un tout petit. Lynne a donc fait le mélange levain, sirop et pâte, puis elle m’a aidé décorer la brioche après encore un temps de repos.
- Pour le levain : 65 g de farine , 4 cl d’eau, 8 g de levure de boulanger
- Pour la pâte : 250 g de farine, 2 œufs
- Pour le sirop : 4 cl d’eau, 20 g de fleur d’oranger (plus ou moins selon les goûts), 65 g de sucre, 65 g de beurre, pincée de sel
- Pour décorer : 1 œuf, sucre en grain (j’ai utilisé du sucre roux), fruits confits (j’ai trouvé des peaux d’orange confites)
Recette :
- Le levain : Délayez la levure dans l’eau tempérée et l’incorporez dans la farine.
Pétrissez le tout jusqu’à l’obtention d’une pâte élastique et laissez lever (faut qu’il double au moins de volume). - Le sirop : Faites fondre doucement le beurre avec l’eau, le sucre, le sel et la fleur d’oranger. Laissez tiédir et réservez.
- La pâte : Mettez sur le levain la farine et les œufs ainsi que 2/3 du sirop environ. Pétrissez le tout jusqu’à ce que la pâte se décolle du saladier. Ajoutez ensuite le tiers restant du sirop et pétrissez de nouveau (ne pas hésiter à bien pétrir, la pâte n’en sera que plus élastique et la galette meilleure !)
Une fois le pétrissage terminé, formez une boule et laissez doubler de volume (au minimum). - La galette : Faites le trou de la galette en appuyant votre coude au milieu de la boule et élargissez en étirant la pâte petit à petit. Aplatissez la galette, incisez la sur un bord intérieur pour y glisser la fève et refermez. Laissez de nouveau gonfler.
- Badigeonnez la galette avec un œuf battu et saupoudrez de sucre grain et / ou fruits confits
- Cuisson : 15 min à 170°C.

January was the month of hibernation … cold, snow, stomach bug, flu, tiredness… the wish to stay warm and cozy in front of the fireplace or under the cover… But January is also the month for King’s bread !
Though not very religious country anymore, the tradition to celebrate Epiphany is very strong in France. Maybe a way to fight the cold winter away or to make Christmas time last a bit longer. Following Christian tradition, the Epiphany, January 6th marks the visit of the 3 Kings to baby Jesus. In the south of France, we eat a sweet bread flavored with orange blossom water and decorated with big sugar grains and candied fruits. A small porcelain personage (usually baby Jesus, Marie or one of the King) is hidden inside the bread. If you get it, you become Queen or King and you have to wear a paper crown.
As I have to bake my own bread here (we rather buy it in France), I did again the recipe I did last year (see here). Even if the bread is more dense than the one of the French backers, tit s as tasty ! I prepared the leaven and syrup in advance, while Lynne was sleeping. The steps need resting time which is hard to deal with a little one. Better focus on one or 2 steps. So Lynne mixed the leaven and the syrup to the batter. Then, after one more resting time, she helped to decorate the bread.
Ingredients (for 8 people) :
- For leaven : 1/2 cup flour, 1.5 oz warm water, 7 g yeast
- For syrup : 2 oz orange blossom flower (more or less depending on your taste), 1/3 white granulated sugar, 1/4 butter (65 g), salt
- For batter : 2 cups and 1/4 cup flour, 2 eggs
- To decorate : 1 egg yolk, raw sugar, candied fruits (optional, I found orange in shop, though you can easily make some in advance).
Recipe :
- Leaven : mix yeast, water and flour. Knead until it gets a rubber consistency. Let it rise at least double volume.
- Syrup : Melt together butter, water, sugar and salt. Put aside.
- batter : On the leaven, pour flour and eggs and 2/3 of the syrup. Knead. Add the rest of the syrup. Knead. I usually adjust flour to get a non sticky dough. Do not hesitate to knead a lot. The bread will rise better.
- Form a ball with the dough, make it a bit flat and make a hole in the middle. Enlarge the hole, little by little to obtain a circle. Let rise for a while (the bread has to rise).
- Spread the egg yolk on the bread and pour sugar and candied fruits.
- Bake in oven for 15 min at 350 °F.
